Oven Roasted Potatoes
3 pounds yukon gold potatoes, unpeeled
2-3 cloves of garlic, minced (optional)
1 tablespoon rosemary, minced (optional)
extra virgin olive oil
kosher salt
pepper
Preheat oven to 350° degrees.
Chop potatoes into bite size pieces of roughly equal size. Arrange on a baking sheet. Add garlic, rosemary, olive oil, salt and pepper; toss well.
Roast until crisp and tender, about 1 hour to 1 and 15 minutes.
Oven Roasted Chicken
chicken pieces (breast or leg), bone in with skin on
extra virgin olive oil
kosher salt
pepper
Preheat oven to 350° degrees.
On a large baking sheet, arrange chicken (skin side up), drizzle with olive oil and sprinkle liberally with salt and pepper.
Roast until cooked through, about 35-40 minutes.
